Seared salmon, toasted cauliflower, pine nuts and a basil crème

Risotto of lemon and organic chicken, new season olive oil and pangratto

Confit duck leg, orange and ginger sauce, panko potato

Grilled springbuck, smoked bone marrow, port and anise reduction
